Authentic Tokyo Cuisine & Soba Noodles. The cynosure is soba, buckwheat noodles that can be ordered hot or cold, in different textures, with different condiments and dipping sauces. The coarse inaka soba with white sesame sauce is an ideal, ambrosial marriage. There are also grilled meats, shabu-shabu options and a whole lot more, some of it unfamiliar and challenging, most of it prepared and presented with an extraordinary attention to detail. That's a credit to Japan's Matsushita brothers, who run the kitchen; co-owner Jean-Georges Vongerichten.
