Ponty Bistro began with the simple goal of bringing a unique but unpretentious French-African cuisine to a neighborhood that needed it. However, as the restaurant took shape a new vision emerged. Ponty's owners are proud of their cuisine, and just as proud of their new concept- the low impact restaurant. Ponty uses only recycled paper products, all cans and bottles are recycled and much of the food comes from organic local farms. The most important aspect of this program is built into the restaurant itself. Ponty's wood veneer, molding and trim are done with FSC (Forest Stewardship Council) wood, which means it was harvested using sustainable forestry with great care taken to ensure that indigenous peoples and species are in no way harmed. Ponty also uses fair trade coffee products. "basically we are bringing the concept of corporate responsibility to the small business, hopefully we can set an example for the big guys. It's not that we think were doing some momentous thing, just we don't want to be part of the problem.
