Located in New York City?s vibrant Chelsea neighborhood, Salinas is a stylish restaurant that offers Spanish cuisine with a focus on the Mediterranean coast and the Balearic Islands. The name is inspired by the many salinas, areas where salt is harvested from the sea, along the Mediterranean coast of Spain and throughout the country?s surrounding islands.
The partners behind Salinas, Nicolas Matar, Mary Catherine Mikula and Donald Mikula have traveled extensively throughout Spain and were inspired by the country?s lively culture, music and natural resources. They partnered with chef Luis Bollo (Mediterra in Princeton, NJ and Meigas in New York City), a San Sebasti n native, to create a menu highlighting classic dishes from the country?s Mediterranean coast.
