Indigo Restaurant and Bar, 999 Route 1 South, North Brunswick, has recently opened, serving fine Indian cuisine in a modern, elegant setting. Some items on executive chef Vasant Mangal Pakhiddey's menu are: nawabi tangadi (chicken marinated in creamy pistachio sauce and roasted in the tandoori oven), hariyali gosht masala (lamb curry with spinach), paneer ka soola (cubes of cheese marinated with tomatoes, green chilies, ginger, and the chef's special sauce), spicy fish masala (fish fillet marinated in South Indian spices and cooked on a griddle), jhinga angaare (jumbo prawns flavored with hot spices and roasted in the tandoori oven), steamed kesari aloo gobi (cauliflower and potato sautéed with cumin, ginger, and ground spices), Baingan Fantasy (whole small eggplant cooked in onion tomato sauce with sesame seeds, raisins, and cashew nuts), and ten different breads. The Indigo Bar has live entertainment on Thursdays and DJ night with dancing every Saturday from 11:30 PM to 2 AM, and also offers bar snacks, exotic cocktails, imported and domestic beers, and a wine list that complements the menu. The restaurant is open for lunch and dinner daily. Founder and managing director, Vijaya Shetty brings international fare and flair to Indigo Restaurant & Bar. He grew up in Bombay where his family ran a leading restaurant. Later, Vijay moved to Hong Kong to open a restaurant serving an eclectic menu of Italian, Chinese, and Indian dishes. Vijay also created fine Indian and Italian restaurants in Dubai, New York and New Jersey and greatly expanded his restaurant business to become one of New Jersey's leading caterers. Indigo is his newest venture - a fine dining restaurant serving contemporary Indian food in an elegant atmosphere, professionally served and accompanied by exceptional wines from Indigo's carefully chosen wine list.
